Spinach & Cheese Soup

Creamy Spinach & Cheese Soup

Ingredients
1 Tbsp. soft reduced calorie margarine
1/4 cup chopped onions
2 cups fat-free milk
1/2 lb. pasteurized Cheese, cut into 1/2-inch cubes
1 pkg. (10 oz.) frozen chopped spinach, cooked, well drained
1/8 tsp. ground nutmeg
Dash pepper

Method
Melt margarine in medium saucepan on medium heat. Add onions; cook and stir until tender.


Add the remaining ingredients; cook on low heat until cheese is melted and soup is heated through, stirring occasionally.

  1. HI Swarna, you can use any cheese that you like, but Cheddar, Swiss or Bleu cheese are ideal with spinach, and would melt well, making this a nice and creamy soup.
