Summer has kicked in nice and strong in my part of the world, and people are all geared to enjoy the sun, sand and the cool waters of the Pacific by hitting the beaches. What you need to beat the heat is something cool and refreshing. Just like these lovely red Raspberry & Champagne Ice Cream Floats. In fact, they are so versatile you can easily add them to your any-time entertaining menu. This recipe, excerpted from the cookbook Dessert Express and reprinted by Fine Cooking, is an elegant take on the ice cream soda, with a scoop of vanilla ice cream and a handful of raspberries floating in a glass of champagne. With just 4 ingredients poured into a tall dessert glass, this stylish treat will woo your guests, even those that are hard to please! And if you are looking for a simple ice cream shake, just skip the champagne and use some milk instead.

Raspberry & Champagne Ice Cream Floats

Ingredients
Makes 4 servings

1 cup fresh raspberries, picked over
1 pint vanilla ice cream, slightly softened
1/4 cup framboise or other raspberry eau de vie
2 cups chilled dry champagne or sparkling wine

Method
Put 2 Tbs. of the raspberries in the bottom of each of 4 tall glasses. Top with a 1/4-cup scoop of ice cream. Drizzle 1 Tbs. framboise into each glass, then top with another 2 Tbs. of raspberries and another 1/4-cup scoop of ice cream. Pour 1/2 cup of champagne into each glass. Serve immediately with a straw and a long-handled spoon.
