Healthy & Delicious Mixed-Fruit & Yogurt Parfait

Yogurt Parfaits are a healthy and tasty treat to grab on-the-go. They not only keep you full, but also provide you with a perfect balance of nutrition – calcium, protein, fats, vitamins and anti-oxidants, all mixed in one. So how can you ever say no to something that’s as delicious as it is healthy! Today, I want to share with you a version that has become a big hit in our house lately. Instead of using low-fat yogurt, I make this one with creamy greek-style Vanilla yogurt, and to boost its flavor, I add a hint of Rose and Almond essence. Paired with any seasonal fruits that you can find in your Farmer’s market, this is a surprisingly delicious treat.

I had a bunch of fresh figs lying in my fruit basket, and if I did not use them in a couple days, they would surely have gone rotten. My first thought was to make a Fig pudding, but when I saw the vanilla yogurt sitting right beside the figs, I decided to go the healthy way, and opted to make a Parfait instead. With layers of creamy yogurt, fresh berries and figs, and some crushed walnuts and granola, this healthy, wholesome and almost dessert-like Parfait recipe is one you’ll turn to more often than not.

Mixed Fruit Parfait with Greek Yogurt

Cook Time: 5 mins
Serves: 2

Ingredients
1 cup vanilla flavored greek yogurt
1/8 teaspoon almond extract
1/8 tsp rose extract
1 cup fresh berries
2 fresh figs – sliced
2 tbsp honey
1/4 cup orange juice
2 tablespoons coarsely chopped walnuts
1/2 cup granola

Method
Take half of the fruits and heat them in a skillet with the honey and orange juice. Let it reduce just a bit, so the fruit gets macerated and juicy. Reserve the remaining fruits for garnishing the parfait.

Mix yogurt with the rose and almond extract. Take 2 parfait glasses, or broad dessert glasses, and make a layer the cooked fruit at the bottom. of Alternate with layers of yogurt, granola and more fruits. Finally, add some chopped walnuts and serve refrigerated, or at room temperature.

Great for a snack, dessert, or breakfast.
