A refreshing cocktail sounds just about right after a long day at the beach, and if you are a cocktail person rather than a smoothie person, this Mango Mojito is just what you need! Mangoes are a favorite fruit in India, in fact, it has been crowned as the King of Fruits. The luscious sweet fruit lends a rich quality to any drink recipe, but when combined with a splash of Pineapple flavored rum, it can evolve into a very fine cocktail indeed.
This Mango Pineapple Mojito is a lovely twist on the classic Mojito recipe – Lime juice, mint and simple syrup get paired with 2 delicious tropical fruits to create a concoction that is perfect for summer entertaining. Mango & Pineapple Mojito
2 1/2 oz pineapple flavored rum
1 1/2 oz lime juice
1 1/2 oz simple syrup
6 mint leaves
2 tbsp Mango Puree
Garnish: pineapple wedge and leaf
Shake all ingredients vigorously in a cocktail shaker with ice.
Strain the mixture into a thick cocktail rocks glass with a generous serving of fresh ice.
Garnish with a pineapple wedge and a pineapple leaf before serving.
Its hard to go wrong with Fruit Cocktails, especially when the star ingredient is the sultry Mango! Pineapple pairs well with its tropical counterpart, and if you want a Mocktail instead, just substitute pineapple rum with some plain pineapple juice or even Pineapple Schnapps. Instead of garnishing with a pineapple wedge, keep it simple but tasty by adding chopped mango cubes that float on the top of the drink. For a non-alcoholic version, kick things up a notch by adding a pinch of Jaljeera, which is an Indian spice perfect for Summer drinks.
