Microwave Pineapple Kesari

pineapple-kesariPineapple Kesari is one of the most famous desserts from Southern India. “Kesari”, also known as Sheera or Halwa in other parts of India, is an easy and delicious dessert made from semolina, milk, water, and in most cases – Pineapple. But to make it easier for you to relish this delicacy as much as you like, here’s a quick and tasty Microwave recipe – this no-fuss method will make it very simple to indulge in some hot Pineapple Kesari whenever you feel like having a bite! Just deck it up with some more saffron, and some chopped nuts and raisins, and you are all set for a beautiful and satisfying Indian dessert, ready in no time!

Ingredients
Makes about 10-12 servings
1/2 cup rawa(semolina)
1/2 cup pineapple purée
1 cup water
1/2 cup milk
5 tbsp sugar
a few strands saffron (kesar)
2 tsps ghee
1/4 tsp cardamom (elaichi) powder

Method

In a microwave-safe bowl mix together the pineapple purée and 1 tablespoon sugar and microwave on HIGH for 2 minutes.

Add the milk, water, remaining sugar and saffron and microwave on HIGH for 2 minutes.

In another microwave safe bowl mix together the semolina and ghee and microwave on HIGH for 2 minutes, stirring after every 30 seconds.

Add the rawa to the pineapple mixture and microwave for 4 minutes on HIGH, stirring once after 2 minutes.

Add the cardamom powder and mix well, giving it a final stir.

Once ready, transfer the Pineapple Kesari onto a serving plate; garnish with a few strands of saffron, and maybe a few crushed nuts, and serve hot.

  1. Hi rads – yes, you can use fresh pineapple to make the puree, just make sure it is sweet enough, or compensate with sugar. Also, the canned ones have a little bit of color added to it, so with fresh one, your kesari might not be that yellowish, but you can add a few more strands of kesar to get the bright orangish color:)

    Just don’t add any water to the puree, and make sure you drain it out before adding it to the kesari.
