Upside-Down Spiced Plum Cake

I have this eternal love for plums – their color and vibrancy just fill me up! But here’s a recipe that will blow you away! The beautiful Red is complimented by the wonderful Green of the Pistachios that go into this Plum cake. And the spices like cinnamon & nutmeg only take it to the highest taste level! This Plum Cake recipe is unlike any other you may have come across; and the prettiest one you’ll see on a holiday dinner table!

Ingredients
8 Plums – (pitted & quartered)
1/2 cup Pistachio nuts – roughly chopped
1/2 cup Butter
1 cup Sugar
2 Eggs
1 tsp Vanilla Extract
1 tsp Almond Extract
1 cup Flour
1 tbsp Cinnamon powder
1 tsp Nutmeg powder
1 tsp Baking powder
1/4 tsp Salt

Spiced Topping
2 tbsp Brown Sugar
1 tsp Cinnamon powder

Method
Preheat the oven to 375 deg F. Grease & line bottom of a non-stick cake pan with parchment paper and keep it ready.

Sift flour, cinnamon, nutmeg & baking powder and salt together and keep aside.

Sprinkle 1/4 cup chopped pistachios on the base of tin. Top evenly with chopped plums.

Cream butter & sugar till fluffy. Add eggs and both the extracts & beat well. Finally mix in the flour mixture. Pour this batter evenly over the plums & pistachios.

Mix the cinnamon & sugar for the topping in a small bowl. Sprinkle over the top evenly & bake for 35-40 minutes.

Allow to cool in the pan for 20 minutes. Then turn out onto rack & gently peel off the lining off the top, scraping back any fruit that might cling on to the lining.

Give it a generous sprinkling of powdered sugar & the remaining chopped pistachios. Serve this colorful and healthy Spiced Plum Cake with a drizzle of whipped cream or a scoop of vanilla ice-cream!
