Serves: 20
Ingredients
  • 3 cups whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup cold unsalted butter, chopped
  • 1 cup dark brown sugar, packed
  • ¾ cup maple syrup
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 8oz bittersweet chocolate, roughly chopped
Directions
  1. Preheat the oven to 350°F. Line two large baking sheets with baking paper.
  2. Sift all the dry ingredients into a large bowl.
  3. Add the butter and sugars to the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low speed, mix just until the ingredients are blended, about 2 minutes.
  4. Add the eggs, one at a time, mixing until each is combined. Mix in the vanilla.
  5. Add the flour mixture at once and blend on low just until the flour is barely combined, about 30 seconds.
  6. Next add the chocolate chunks at once and mix on low speed just until the chocolate is evenly combined. Do not over-mix the dough, as that would make your cookies hard.
  7. Using an ice scream scooper, place mounds of dough onto prepared baking sheets, about 3 inches apart.
  8. Bake the cookies for 12-16 minutes or until they are evenly dark brown. Transfer the cookies, still on the baking paper, to the counter to cool.
  9. Cookies are best the day they are made but will keep in an airtight container for up to 3 days.
