Chocolate Zucchini Bread

chocolate-zucchini-bread4 The smell of a freshly-baked Chocolate Zucchini Bread can be tantalizing, and a serious booster to get you out of bed in the morning! Especially when it looks and tastes this good! I’ve never been a fan of zucchini in my food, and yet, this recipe is close to my heart. It is moist, dense, and is not heavily owerpowered with chocolate. But that’s not all, to add to its credit, this Zucchini bread is super-delicious and healthy too – with fewer calories than regular sweet bread, this classic Chocolate Zucchini Bread recipe is great for holiday baking, or hearty breakfasts!

I’m sending this to Zorra who’s collecting wonderful Bread Recipes for the upcoming World Bread Day, and also to Anita for the Spice it Up version of Sugar High Fridays!

For an eggless version, remove the eggs from the recipe and add 1/2 cup more of applesauce.

Ingredients
1.5 cups shredded raw zucchini
1.5 cup all-purpose flour
1/2 cup cocoa powder
1.5 cups brown sugar (more if u want a sweeter bread)
1/2 cup semi-sweet chocolate chips (optional)
1/3 cup chopped walnuts (optional)
2/3 cup unsweetened applesauce
1/3 cup oil
2 eggs
1 tsp vanilla extract
1.5 tsp all-spice powder
1.5 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Method
In a large mixing bowl, beat the sugar, applesauce, oil, eggs and vanilla until well blended.

Combine the flour, cocoa-powder, all-spice, baking powder, salt, and baking soda in another bowl. Gradually beat into the liquid mixture until blended. Stir in the zucchini(squeezing it to remove any excess water), chocolate-chips and walnuts.

Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven. Grease (or spray with a nonstick vegetable spray) a 9 inch loaf pan and set aside.

Scrape the batter into the prepared pan and bake until the bread has risen and a toothpick inserted in the center comes out clean, about 55 to 65 minutes. Place on a wire rack to cool for about 10 minutes, then remove the bread from the pan and cool completely.

Use a warm knife to slice the bread. Enjoy the delicious Chocolate Zucchini Bread with a cup of Latte or Tea! Or top it with some ice cream for a perfect dessert!
