Pumpkin Mousse

I am not a big fan of Pumpkin, but when my 2 year old forced me to buy one at the grocery store just because she thought it looked ‘cute‘, I knew I will have some pumpkin recipe hunting to do! I decided to start with something very light and simple, something I could afford to give away if it did not appeal to our family’s taste-buds, and that’s when I came across this really easy Pumpkin Mousse recipe over at King Arthur’s website. I wasn’t sure if pumpkin by itself would be an agreeable flavor, so I decided to draw inspiration form this recipe at Taste of home, and added a bit of Butterscotch pudding mix to the mousse.

Pumpkin and Butterscotch complimented each other beautifully. The mousse was light, flavorful and not overly sweet. We could taste both the flavors, and to make it more fancy, I added a layer of crushed candied pecans and butterscotch chips on the top. Serve these in mini dessert glasses or shot glasses for a quick, easy and elegant Pumpkin dessert!

Pumpkin Mousse

Serves: 4

Ingredients
1-1/2 cups cold low-fat milk
1 package (1 ounce) sugar-free instant butterscotch pudding mix
1/2 cup canned pumpkin or fresh pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
2 tbsp crushed candied pecans
2 tbsp butterscotch chips
1/4 cup whipped cream + more for garnish

Method
In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until softened, just like soft-serve ice cream.

Combine the pumpkin puree, cinnamon, ginger and allspice in another bowl. Fold this into the pudding mixture to combine all the flavors.

Fold in 1/4 cup whipped cream and give it a final stir. Transfer to individual serving disheor dessert glasses. Refrigerate for at least 10 minutes, or until time to serve.

Garnish with equal proportions of candied pecans and butterscotch chips. Add a dollop of whip cream and serve cold.

I have to say that u are wary of pumpkin flavor, then this is a really great first recipe to try. It makes a quick and elegant dessert that will appeal to adults and kids alike. Pumpkin has a lot of health benefits, and with Fall harvest out in the markets, you will find really good quality pumpkins at very affordable prices. Use this occasion to stock up on homemade pumpkin puree, and use it throughout the season to make more fabulous pumpkin desserts throughout the season.
