High Fiber Oat Bran Muffins

blueberry-muffinsOat Bran & Raisin Muffins– the easiest way to fill yourself up in the morning with these healthy breakfast muffins; They are filled with the goodness of whole grain and oat flour, honey and raisins, high in fibers and low in cholesterol. They have a lovely aroma due to nutmeg and cinnamon, and you can easily modify them to suit your taste by adding bananas, apples or blueberries to the recipe. Throw in some pecans and you have a winner! Anyway you bake them, these healthy and delicious High-Fiber Muffins is a great way to indulge in guilt-free snacks when you need some instant energy during the day!

Ingredients
1 1/2 cup oat bran
1 1/2 cup whole-grain white flour
1/2 tsp baking powder
1/4 tsp baking soda
4 egg whites – beaten
2 1/2 tbsp oil
1 cup milk
1/2 cup honey
1/4 cup raisins
1/2 tsp nutmeg
1/2 tsp cinnamon

Method
Preheat oven to 400 degrees F.

Combine all the dry ingredients together in a bowl.

Mix the egg whites, milk, oil and honey in another bowl. Pour this mixture into the dry ingredients and mix well. Add the raisins just to fold them in.

Lightly grease muffin tins. Fill upto 2/3 full with the mixture. Bake for 20 to 25 minutes.

Let them cool on the wire rack before serving! Delicious and high-fiber Oat Bran & Raisin Muffins ready in no time!

  1. hey, I did try these with apples, and I have to say they taste fabulous and so moist too! but I used 3 tbsp oil, a little more than what you’ve specified in the recipe, and I think that makes them more soft:) but thanks for a great healthy recipe!
