Vegetable Bread Rolls

They don't take up much time, can be made in a jiffy, and is a neat way to use up leftover vegetables. Wrap them into silver foils and you can carry them over in a picnic or lunch basket on a nice sunny day. Or serve them with chutneys or yogurt sauces to create perfect party appetizers.





Ingredients
For the filling
2 cups - boiled vegetables (potato, carrot, peas, french beans, capsicum)
1 cup - coriander leaves
Salt as per taste
1 tsp - red chili powder
1 tsp - coriander leaves

For the covering
10 to 12 - slices of bread
100g - buttermilk
Oil for frying

Method
Mix and mash well all the ingredients of filling in a bowl.

Remove the edges from each slice of bread. Now take one slice of bread, dip a little in the buttermilk, and press gently to remove excess buttermilk. Put in the filling in the center and gently roll over both sides to make a roll. Repeat with all the remaining slices of bread.

Deep fry one by one. Enjoy with tomato ketchup or green chutney for a quick and filling snack!
