1/2 cup granulated sugar
2 tsp vanilla essence
2-3 rhubarb stalks - chopped
6 strawberries - chopped
2 ounces brandy
1 cup sparkling rose
a shot of red wine (optional)
1 tbsp superfine sugar
1 lime - juiced
strawberry slices - for garnish
Method
In a saucepan, combine granulated sugar, 1 cup water, and the vanilla essence. Simmer until sugar dissolves, turn off heat, and add chopped rhubarb. Cover for 5 minutes. Break up rhubarb with a spoon and set aside for 30 minutes, then strain.
Crush the berries into the brandy in a bowl; let sit for 30 minutes, then strain the juice. Combine brandy mixture, sparkling rose, red wine, superfine sugar, lime juice, and the rhubarb syrup in a pitcher, and stir in the strawberry slices!

Sounds like a great recipe... I hope it's not too late in the year to find some Rhubarb. I've noticed that a lot of my local stores haven't been carrying it.

does this need to sit over night or for at least 4 hours before serving?
Nova - you can let it sit for about an hour so the berries and the liqueur blend well together. But overnight is definitely not needed; I'd say max a couple hours.
